A bipolar signal moves both above and below zero volts, for example from -5 V to +5 V. Audio signals are bipolar, and many LFOs are too.
Bipolar modulation can push a parameter up and down around its set point. If a destination expects unipolar CV, a bipolar signal may be cut off or behave unexpectedly, so offset or attenuate it as needed.
