Bit depth is the number of bits used to describe each sample in a digital signal. Each extra bit adds about 6 dB of dynamic range, so 16 bit audio offers roughly 96 dB and 24 bit offers roughly 144 dB.
Low bit depths create audible quantization noise, which bit crushers use on purpose.
